Almond Oat Pancakes with Raspberries

Every weekend is the same! We have pancakes in the morning, at breakfast, and occasionally some more in the afternoon, on a lazy kind of a day resting on the sofa & watching a few of our favorite series and movies.
I guess all weekends call for pancakes. I mean… mine definitely do. They are good at anytime!
This Sunday was all about these pancakes & Anime. We watched this movie and caught up with Boku dake ga Inai Machi, also known as Erased. And I confess I’m so hooked with that series! If you love Anime like me I totally recommended. And of course always the original (non-dubbed) version. Just saying.
These Almond Oat Pancakes are healthy & delicious. The almonds give a crunchy feel to their fluffy texture. I love it! Let’s fill it up with these scrumptious pancakes!
Ingredients
3 eggs, bio & at room temp.
1/2 cup almond milk
4 tbsp extra-virgin coconut oil, melted
1 cup oat flour
3 tbsp light brown sugar, optional
1/4 tsp baking powder
1/2 cup sliced almonds
Topping
zest of 1 orange
120g raspberries
QS sliced almonds
Instructions
1. Whisk the eggs with the milk and coconut oil until smooth. Add the flour, baking powder & sugar and whisk. Add the almonds and toss. Set aside and let it rest for 10 minutes.
2. Heat a skillet on a medium heat and grease it with some coconut oil. Pour pancake batter on the center of the hot pan and let it cook until bubbles appear on the surface and form holes. With a spatula gently flip the pancake over and cook the other side. Repeat with the remaining batter.
3. Mash the raspberries and add the orange zest. Toss.
4. Serve the pancakes with the topping and some almonds too. You can sprinkle with maple syrup if desired.
